However, we often forget that its shelf life after opening is significantly different from what is indicated on the label. While homemade mayonnaise spoils in just a few days, store-bought versions “live” a bit longer thanks to preservatives. Store-Bought vs. Homemade: What’s the Difference in Shelf Life?

The moment you open the jar or packet, the countdown begins. For store-bought mayonnaise, which contains preservatives, this period is quite long. Manufacturers usually state on the label that it can last for 2-3 months after opening. But it’s always wise to check the specific instructions on the packaging, as the composition can vary.

Homemade mayonnaise is a completely different story. It has no artificial additives, which makes it vulnerable. Due to its high content of eggs and oil, it spoils quickly. Therefore, homemade sauce should be consumed within 3-5 days to maintain its fresh taste and, most importantly, to prevent the growth of harmful bacteria.

Even if you adhere to the specified timeframes, it’s important to know how to store the product to keep it from spoiling prematurely.

  • Location matters. You’re probably used to storing mayonnaise on the refrigerator door. But this is the worst place for it! The door is constantly being opened and closed, which causes temperature fluctuations. It’s better to move the jar deeper into the refrigerator, to one of the main shelves, where the temperature is more stable and lower.
  • Airtightness is key. After each use, make sure you tightly close the lid. Contact with air accelerates oxidation and spoilage of the product.
  • Clean utensils. If you use dirty utensils to scoop out mayonnaise, you introduce microorganisms into the jar. They multiply actively and shorten the product’s shelf life. Always use a clean spoon.
  • Freezing is a bad idea. While mayonnaise can be frozen, we don’t recommend it. When thawed, it almost always loses its smooth texture, becoming separated and grainy. So it’s better to consume it in time rather than end up with a spoiled product.
