For some reason, most homemakers today immediately think of Korean-style carrots when it comes to quick snacks. We’re used to buying them at supermarkets or making them at home with a ton of spices and hot oil. But many people don’t even remember the good old, almost forgotten recipe for vitamin carrot salad that was the star of every table just a few decades ago. I think that’s a total shame, my dears! After all, this dish is a real find for those who value their time and health.

Preparing this salad takes significantly less effort than the exhausting process of marinating vegetables. The finished dish turns out incredibly zesty, aromatic, and very tasty. It’s perfect both as a side for a main dinner and as a standalone snack. I often cook it myself when guests are already at the door and there’s only a basic set of products in the fridge. Trust me, the result always sparks delight and requests for the recipe.

I’ve prepared a detailed description of this culinary lifesaver for you. This salad has its own history — it was popular thanks to the availability of ingredients in any season. Despite its simplicity, the combination of sweet carrots, spicy garlic, and tart walnuts creates a true gastronomic balance. The calorie count for such a dish is approximately 140-160 kcal per 100 grams (depending on the dressing), and the cooking time is no more than 10 minutes. A real record!

What We’ll Need

To prepare this homemade treat, I use the following products:

  • fresh carrots (preferably juicy varieties) — 2-3 pieces;
  • garlic — 3-5 cloves (adjust the spiciness to your liking);
  • walnuts — a good handful;
  • mayonnaise or thick sour cream — for dressing;
  • salt and spices — to your taste.

Step-by-Step Preparation Process

  1. First of all, you need to thoroughly wash the carrots, peel them, and grate them on a coarse grater. If you like a more delicate texture, you can use a medium grater.
  2. The garlic should be minced in any convenient way: pass it through a special press or grate it on a fine grater directly into the bowl with the carrots.
  3. I usually toast the walnuts in a dry pan for a minute or two to enhance the aroma, then chop them with a knife. Don’t turn them into dust — small pieces should be felt.
  4. In a deep bowl, mix the grated carrots, minced garlic, and nuts.
  5. Add your chosen dressing (mayonnaise or sour cream) and your favorite spices. My top tip: if the carrots aren’t very sweet, be sure to add ⅓ teaspoon of sugar — it brings out the garlic flavor.
  6. Thoroughly mix all the components so the dressing is evenly distributed.

Sometimes I like to experiment and swap the nuts for half a cup of raisins steamed in boiling water. The taste is completely different, more dessert-like and unusual, but also very interesting! This version is especially popular with kids who often fuss and don’t want to eat healthy veggies.
