Secrets of My Strawberry Palyanytsia: A Recipe That Melts Hearts

Нехитрий Рецепт Самчної Випічки, Який Завжди Виходить Ідеальним

I am always looking for those recipes that are not just delicious, but also have soul. This strawberry palyanytsia recipe is exactly that. I first discovered it when I was looking for something simple yet exquisite for a family tea party, and I was pleasantly surprised by the ease of preparation and the incredible result. This is not just a pie, it is a true symbol of summer, baked into delicate, fluffy dough. In my family, this dish is loved to be made as soon as the first juicy strawberries appear.

I like this option for its versatility. The palyanytsia comes out very airy thanks to the yogurt, and the strawberry gives it that desirable tartness and fantastic aroma. I always add a little more vanilla because I believe it perfectly complements the strawberry duet. Save this recipe—I am convinced it will become your reliable helper when you crave something homemade and very delicious.

Ingredients for a Tender Palyanytsia

To prepare this summer delicacy in a springform pan with a diameter of 20 cm, you will need:

  • Eggs — 2 pieces
  • Sugar — 90 grams
  • Vanilla sugar — 10 grams
  • Yogurt without filler (natural) — 200 grams
  • Oil (refined sunflower or odorless olive oil) — 120 grams
  • Baking powder — 10 grams
  • Wheat flour — 220 grams
  • Fresh strawberries — 400 grams
  • Starch (corn or potato) — 1 tablespoon

Step-by-Step Preparation — My Personal Secrets

Step 1. Preparing the Dough Base

I start by thoroughly whisking the eggs with sugar and vanilla sugar. I do this until the mixture becomes light and quite fluffy. This is what makes the palyanytsia so airy.

Step 2. Adding Liquid Components

Next up are the yogurt and oil. It is important that these ingredients are at room temperature, so they combine better. I pour them into the egg mixture and continue to whisk at a low speed, just until smooth.

Step 3. Kneading the Perfect Dough

It’s time for the dry ingredients. I always sift the flour along with the baking powder directly into the liquid mixture. I like to mix the dough with a spatula or at the lowest speed of the mixer. The main thing is not to overmix, so as not to “overwork” the dough, otherwise it won’t be as tender.

Step 4. Preparing the Pan and Strawberries

I line the baking pan with parchment paper and grease it with a small amount of butter or oil. This is my guarantee that the palyanytsia will not stick. I wash the strawberries, cut them into quarters (although you can cut them in half if the berries are small), and I always roll them in starch. This is a small secret: the starch prevents the berries from sinking to the bottom and absorbing too much moisture.

Step 5. Forming the Palyanytsia

I pour exactly half of the dough into the prepared pan. I spread half of the prepared strawberries on top. Then, I pour the second part of the dough and arrange the rest of the strawberries. I like it when the berries peek out a little from the dough.

Step 6. Baking

I always check the oven in advance: it must be preheated to 160 °C. I bake the palyanytsia for about an hour. I check for readiness with a wooden skewer: it should come out completely dry from the center of the pie. After baking, I let the palyanytsia cool slightly in the pan, and then sprinkle it with powdered sugar.

Tips and Variations

  • Yogurt Substitution: If you do not have natural yogurt, you can substitute it with kefir or low-fat sour cream. This will add a pleasant moistness to the dough.
  • Other Berries: Instead of strawberries, I often use cherries (pitted, of course), blueberries, or raspberries. Cherries and raspberries also require starch.
  • Flavoring: Try adding lemon or orange zest. It fantastically freshens the taste of the pastry!
  • For a Diet Option: Part of the sugar can be replaced with a natural sweetener, and wheat flour with whole-grain flour.

This strawberry palyanytsia is the epitome of summer coziness. It is so simple that even a novice cook can handle it, but so delicious that it is not embarrassing to serve at a festive table. I am convinced that this recipe will become a favorite in your family too, bringing warmth and joy every time you make it.

A Brief History of the Dish

Palyanytsia is a traditional Ukrainian bread, known for its rounded shape and characteristic “visor” or cut on top. Since ancient times, it has been a symbol of prosperity and hospitality. Of course, this sweet version with strawberries is a modern interpretation that took only its name and popular love from the classic palyanytsia. Essentially, this recipe is a Ukrainian analogue of an open fruit pie or sharlotka, but thanks to the addition of yogurt or fermented dairy products, it acquires its unique, moister texture.

In the modern culinary world, berry palyanytsia has become a popular, quickly prepared summer pastry. Its name has also acquired symbolic meaning, becoming a kind of marker for determining “friend or foe” due to the difficulty of pronunciation for Russian speakers.
